Mexican Beef Casserole Recipe
Ingredients
1 pound lean ground beef
1 (15 ounce) can ranch-style beans
1 (14.5 ounce) can peeled and diced tomatoes
1 (10.75 ounce) can condensed cream of mushroom soup
1 (12 ounce) package corn tortillas
4 cups shredded Cheddar cheese
2 tablespoons chili powder
Directions for Mexican Beef Casserole Recipe
- Preheat the over to 350 degrees
- In a pan, cook the ground beef until browned
- Add in the beans, soup, chili powder, and tomatoes
- In a casserole dish, add in enough tortillas to line the bottom
- Top with meat mixture and repeat layering finishing off with meat
- Top the mexican beef casserole with cheese
- Bake for 30 minutes
This Mexican beef casserole recipe was excelent. I did make some changes though to spice it up a bit, I didn't have any tortillas so I used Baked Doritos and added in some jalepenos. Awesome!
