Tamale Casserole Recipe
Ingredients
1 pound lean ground beef
1 jalapeno pepper, seeded and diced*
2 cups frozen corn, thawed
1 (28 ounce) can diced tomatoes, undrained
1 1/2 cups fat-free milk
1 cup cornmeal
1 (4 ounce) can chopped green chilies, drained
1 (2.25 ounce) can sliced ripe olives, drained
2 egg whites, lightly beaten
1 (1.25 ounce) package reduced sodium taco seasoning
1 cup shredded reduced-fat Cheddar cheese
1 cup salsa
Directions for Tamale Casserole Recipe
- Turn your oven on to 350 degrees
- In a skillet, cook the beef and jalapenos until browned
- Mix in the tomatoes, corn, chilies, milk, olives, cormeal, egg whites, and taco seasoning
- Get out a casserole dish and pour the tamale mixture in
- Top with cheese
- Bake for 45 minutes
