Italian Chicken Casserole Recipe
Ingredients
2 (3.5-oz.) bags quick-cooking rice
1 pound chicken breast, cut into cubes
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil, divided
1 small onion, finely chopped
1 (8-oz.) package sliced fresh mushrooms
1 (10 3/4-oz.) can reduced-fat cream of chicken soup
1/2 (8-oz.) container sour cream
1/2 teaspoon Italian seasoning
1 (28-oz.) can diced tomatoes with basil, garlic, and oregano, undrained
Directions for Italian Chicken Casserole
- Turn oven on to 350 degrees
- Cook the rice following directions
- Saute the chicken in a pan until browned
- Remove chicken and add onions and mushrooms until tender
- In a bowl, mix together the soup, sour cream, and italian seasoning
- Pour the soup mixture into pan with onions and mushrooms
- Add in the cooked rice
- Pour the chicken mixture into casserole dish
- Bake the italian chicken casserole for 30 minutes
Very good Italian Chicken Casserole Recipe. It makes a large casserole with only a small amount of chicken. It doesn't call for ingredients you would not have on hand already. My kids love it.
