Ground Beef Mexican Casserole Recipe
Ingredients
1-1/2 pounds ground beef
1 envelope taco seasoning
3/4 cup water
1 can (16 ounces) refried beans
1/2 cup salsa
6 flour tortillas (6 inches)
2 cups frozen corn, thawed
2 cups (8 ounces) shredded cheddar cheese
Shredded lettuce, chopped tomatoes, sliced ripe olives and sour cream, optional
Directions for Ground Beef Mexican Casserole Recipe
- Turn oven on to 350 degrees
- In a pan, cook the ground beef until browned
- Mix in water and taco seasoning to the ground beef
- Bring to boil, reduce heat, and simmer for 5 minutes
- In a bowl, mix together the salsa and beans
- Microwave for 2 minutes
- In a casserole dish, add 3 tortillas to the bottom
- Layer with half of the ground beef mixture
- Next add in half the bean mixture followed by corn and cheese
- Repeat layers with ground beef, beans, corn, and cheese
- Bake for 45 minutes
