Mexican Casserole with Chicken Recipe
Ingredients
1 bag nacho chips
1 pound boneless, skinless chicken breast, cooked and chopped
1 medium onion, chopped
1 large can cream of chicken soup
1 can tomatoes
2 cups shredded cheese (Colby or Monterey Jack)
Directions for Mexican Casserole with Chicken Recipe
- Turn oven on to 350 degrees
- In a pan, cook the chicken until browned: cut up
- In a casserole dish, crush up the nacho chips
- Add half the chicken to the casserole
- In a bowl, mix together the tomatoes, diced onion, chicken soup, and chicken broth
- Add the soup mixture into casserole dish
- Add a handful of crushed chips
- Layer on rest of chicken
- Top with remaining chips and top with cheese
- Bake for 30 minutes
Very good mexican casserole with chicken recipe. I always use shredded rotisserie chicken instead and add roasted cumin and red pepper flakes to the sauce to add a little more flavor.
