For a nice and easy meal, try some of these Macaroni Beef Casseroles. You can make a twist on these recipes by using tumeric, coriander, feta cheese, etc...Or just keep it very simple as simple works well.
BEEF AND MACARONI CASSEROLE WITH FETA CHEESE
12 oz pkg whole grain elbow macaroni
1 tbsp olive oil
1 med onion, peeled, finely chopped
1/4 tsp turmeric
1/4 tsp ground corriander
1/4 tsp pepper
1 lb lean ground beef
2 tbsp lemon juice
1/2 cup chopped parsley
1 cup crumbled feta cheese
2 tbsp bread crumbs
2 tbsp grated Parmesan cheese
- Turn oven on to 400 degrees
- In a pan, cook the macaroni as suggested by package directions. Drain
- In a frying pan, heat up the olive oil and cook the onion until softened. Mix in the spices and the ground beef until browned.
- Mix in the lemon juice
- Pour the macaroni and beef mixture into a casserole dish
- Add the feta cheese (optional)
- Top with some bread crumbs and parmesan cheese
- Bake for 35-40 Minutes
CHEESY BEEF AND MACARONI CASSEROLE
1/2 cup elbow macaroni
1 pkg (10-oz) frozen peas and carrots
2 tbsps butter or margarine
2 tbsps all-purpose flour
1/2 tsp dried basil, crushed
1 1/3 cups milk
1 1/2 cups cubed pasteurized process cheese spread (6 oz)
1 1/2 cups chopped cooked beef (or turkey)
3/4 cup soft bread crumbs
1/4 cup chopped almonds
1 tbsp butter or margarine, melted
- Turn oven on to 350 Degrees
- In a pan, cook the macaroni as suggested by package directions. Drain
- In a frying pan, cook the beef until browned. Drain
- In a seperate pan, melt the 2 tablespoons of butter and mix in the flour and basil
- Add the milk and cook until mixture is thickend and bubbly
- Stir in the cheese, macaroni, peas, carrots, and beef.
- Pour beef mixture into a casserole dish.
- Top with bread crumbs, almonds, and 1 tablespoon of butter
- Bake for 35-40 Minutes
