AMISH BEEF AND CABBAGE CASSEROLE
1 lb ground beef, browned and drained
3 cups fresh cabbage, shredded
3/4 cup onion, diced
1 tsp salt
1/2 tsp black pepper
1/4 tsp garlic powder
1 can tomato soup
1 soup can of water
1 cup cooked rice (brown rice is recommended for diabetics)
1 tbsp brown sugar (can be omitted or use 1 tsp Splenda brown sugar blend)
1 tbsp lemon juice
1 cup shredded Cheddar cheese
- Turn oven on to 350 degrees
- In a pan, cook the ground beef until browned. Drain fat
- Using a casserole dish, add the cabbage as the bottom later.
- Mix in the ground beef and onion
- Add all remaining ingredients expect for the cheese. Mix everything together
- Bake for 1 hour
- Top with cheddar cheese
Beef and Cabbage Casserole
For Potato Crust:
1 1/2 cup hash brown potatoes
1/2 cup shredded cheddar cheese
1/4 tsp pepper
1/8 tsp onion powder
For Beef Stuffing:
1 lb ground beef
1 1/2 cup shredded cabbage
4 oz chopped fresh green chilies
1/2 cup hot cookies taco sauce
1/4 tsp pepper
1/2 tsp onion powder
1 cup shredded cheddar cheese
- Turn oven on to 350 degrees
- For the potato crust, combine the hash brown potatoes, cheese, pepper, and onion pepper and fill the casserole dish. Make sure it covers the bottom and sides
- Cook for 20 minutes
- In a pan, cook the ground beef until browned.
- Remove the beef and fry the cabbage in same pan for 2-3 minutes
- Remove from heat and mix in the ground beef, chili peppers, taco sauce, pepper, and onion powder
- Pour beef mixture into the potato crust and top with cheddar cheese
- Bake for 20 minutes
