Chicken Taco Casserole Recipe
Ingredients
1 1/2 pounds skinless, boneless chicken breasts
Salt and pepper
1 (24 oz.) jar pasta sauce
9 (5-inch) corn tortillas
1 cup chopped cilantro
2 cups shredded Monterey Jack (8 oz.)
1 small tomato, sliced
Directions for Chicken Taco Casserole Recipe
- Turn oven on to 400 degrees
- In a pan, add water and bring to a boil
- Place in chicken and cook for about 10 minutes
- Remove and cut into cmall pices
- Spread 1/3 of pasta sauce into casserole dish
- Top the sauce with 3 tortillas
- Add 1/3 of the chicken and cilantro
- Top with 1/3 of cheese
- Repeat layering twice
- Bake for about 20 minutes
This chicken taco casserole recipe is delicious. My family really enjoyed every bite. I am always cautious when using cilantro, because it really isnt a favorite of mine- but this recipe made it great.

3 cup chopped, cooked chicken
1 package taco seasoning
2 1/2 cup shredded cheddar, divided
2 cup mild salsa
2 cup corn kernels
15 corn tortillas 6" size
- Mix together the chicken and taco seasoning
- In a bowl, mix the chicken salsa, cheese, and corn
- Cut 3 tortillas in half and add 4 whole tortillas plus 2 halves into a casserole dish
- Spread half the chicken mixture over the tortillas and top with another 4 whole and 2 halves
- Layer remaining chicken and last of the toritillas
- Top with half cup of cheese
- Bake at 350 for 30 minutes
