Chicken and Chorizo Casserole Recipe

Ingredients

•1 1/2 c. uncooked long grain rice
•1 small onion, chopped
•1/2 c. peppers (sweet or hot), seeded and chopped
•6 skinless, boneless chicken breasts (or packaged hind quarters)
•Seasoning (salt, pepper, garlic powder)3 c. water
•1 pkg favorite chorizo (about 1lb)

Directions for Chicken Chorizo Casserole Recipe

Dump rice in a deep 13 x 9 baking dish. Add onion and peppers. Season chicken well. Add water. Place seasoned chicken in pan. Crumble chorizo and add atop and around chicken. Cover and cook in 350 oven for about 1 hour. Rice will have absorbed most all the liquid. Let stand for 5 minutes before serving.

Flavor this chicken with chorizo sausage, a spicy Mexican sausage. Cover and bake the chicken and sausage together with rice. Great Chicken and Chorizo Casserole Recipe.
