Ingredients
2 cups diced cooked chicken breast
10 oz. box of frozen spinach, thawed and drained well
1/2 cup fat-free sour cream
1/2 cup mayonaise
1/2 teaspoon garlic powder
1/2 teaspoon white pepper (or black)
3/4 cup grated parmesan cheese
1/4 cup l/f mozzarella
Directions for Chicken Spinach Casserole Recipe
- Turn oven on to 350 degrees
- In a casserole dish, add the chicken and spinach
- In a bowl, mix together all ingredients
- Pour mixture into casserole dish
- Bake for 40 minutes
Chicken Spinach Casserole
10 oz. uncooked mostaccioli (tubular pasta)
1 (10 oz.) pkg. frozen, chopped spinach, thawed
2 tsp. oil
2/3 c. chopped onion
2 lg. cloves garlic, minced
1 lb. boned, skinned chicken breast, cut in 1 inch pieces
2 (14 1/2 oz.) cans whole tomatoes, undrained, coarsely chopped
3 tbsp. tomato paste
1/2 c. grated Parmesan cheese
1 1/4 tsp. dried whole basil
3/4 tsp. oregano
1/4 tsp. salt
1/4 tsp. crushed red pepper
- Turn oven on to 350 degrees
- Cook pasta to package directions
- In a large pan, saute the onions and garlic until tender
- Add in the chick and cook until chicken is no longer pink
- Stir in the spices and tomatoes, bringing to boil
- Reduce heat and simmer
- Add chicken mixture into casserole dish
- Top with cheese and bake for 20 minutes
