Left Over Chicken Casserole Recipe
Ingredients
2 teaspoons olive oil
1 small onion, diced
1 garlic clove, minced
1 red capsicum, chopped (bell pepper)
1 cup canned corn kernel
1 cup chicken stock
1 1/2 teaspoons dried thyme
2 cups cooked rice
1/4 cup sour cream
1 -2 tablespoon mustard (any is fine, choose your favourite)
250 g cooked chicken or 250 g cooked turkey, diced
100 g tasty cheese, shredded
2 tablespoons parsley, chopped
black pepper
Directions for Leftover Chicken Casserole
Turn oven on to 350 Degrees
Saute onions and garlic in a pan
Add in capsicum, corn, thyme, pepper, and 1/4th cup stock
Stir in the remaining stock, sour cream, mustard, and rice
Add in the chicken and take off heat
Stir in 1/3rd of cheese and parsley
Pour chicken mixture into a casserole dish and top with cheese
Bake for 30 minutes
This leftover chicken casserole recipe went over very well.I was asked to make a second casserole with leftover turkey the next night. I did add more than double the cheddar cheese from what was called for, about double the mustard and garlic.
