Potato Breakfast Casserole
1 (6 oz.) pkg. frozen hash brown potatoes
1 qt. hot water
5 eggs
1/2 c. cottage cheese
1 c. shredded cheese
1 green onion, chopped
1 tsp. salt
4 drops hot sauce
6 slices bacon, cooked, drained and crumble
- Turn oven on to 350 degrees
- With some boiled water, add the potatoes and let them soften for 30 minutes. Drain
- in a seperate bowl, mix together ther eggs, potatoes and all ingredients except bacon
- Pour mixture into casserole dish
- Top with bacon
- Bake for 35 minutes
Breakfast Casserole with Potatoes
Ingredients
1 lb. shredded potatoes (can use "Simply Potatoes" found in dairy counter)
1 lb. bacon, diced & fried
1 lg. onion, diced & fried in bacon drippings; drain
3 c. sharp cheddar cheese
8 slightly beaten eggs
1/2 tsp. black pepper
- Turn oven on to 350 degrees
- In a bowl, mix together the eggs, potatoes, and cheese
- Mix in the bacon and onion
- Pour egg mixture into casserole dish
- Bake for 40 minutes
Potato Breakfast Casserole
Ingredients:
1 (6 oz.) box dehydrated hash browns with onions
5 eggs
1 c. shredded Swiss or cheddar cheese
1 tsp. salt
6 slices bacon, cooked & crumbled
1/2 c. cottage cheese
1/8 tsp. pepper
- Turn oven on to 350 degrees
- In bowl, mix together eggs, potatoes, cheese, and seasoning
- Pour egg mixture into casserole dish
- Top with cooked bacon
- Cook for 40 Minutes
