Hearty Healthy Breakfast Casserole
Ingredients
1/2 cup diced red bell pepper
1/2 cup chopped Vidalia onion
4 large eggs
1 cup Milk
3/4 cup (3 ounces) shredded Cheddar CHEESE
1/4 cup Grated Parmesan Cheese
1/4 teaspoon pepper
No-Stick Cooking Spray
4 100% Whole Wheat Bread slices, cut into 1-inch pieces
6 tablespoons reduced-fat bacon bits
Preparation
- Turn oven on to 350 degrees
- In a pan, saute the bell peppers and onion until tender
- In a seperate bowl, mix the eggs, milk, cheddar cheese, parmesan cheese, and pepper
- Add in the pepper and onion
- In a casserole dish, layer the bread pieces into the bottom and pour egg mixture over them
- Cook for 40-45 minutes
Healthy Sausage and Cheese Breakfast Casserole
Ingredients
Cooking spray
12 ounces turkey breakfast sausage
2 cups 1% low-fat milk
2 cups egg substitute
1 teaspoon dry mustard
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground red pepper
3 large eggs
16 (1-ounce) slices white bread
1 cup (4 ounces) finely shredded reduced-fat extrasharp cheddar cheese
1/4 teaspoon paprika
-Turn oven on to 350 degrees
- In a pan, cook the sausage until browned. Drain fat
- In a seperate bowl, mix together the eggs and next 6 ingredients
- In a casserole dish, add the cubed bread slices
- Pour egg mixture over bread
- Top with cheese
- Bake for 45 minutes
Healthy Breakfast Casserole
Ingredients:
1 lb tiny whole new potato, cut ioto 1/4-inch slices
1/3 cup leek, thinly sliced
nonstick cooking spray, coating
3/4 cup lower fat and low-sodium ham, chopped
3 ounces lowfat swiss cheese, cut into small pieces
1 1/4 cups nonfat milk
1 tablespoon all-purpose flour
3/4 cup egg substitute
2 teaspoons fresh thyme, snipped or 1/2 teaspoon dried thyme, cruched
1/4 teaspoon pepper
- Turn oven on to 350 degrees
- In a pan, cook the sliced potatoes in a small amount of boiling water for about 10 minutes or until tender. Drain water
- In a casserole dish, layer the cooked potatoes and leeks into the bottom. Top with ham and cheese
- In a seperate bowl, mix together the milk, flour, egg substitute, pepper, and thyme
- Pour egg mixture into casserole dish
- Bake for 35-40 minutes
