Easy Breakfast Frittata (This one is more of an omelette)
2 lg. eggs
Red pepper, diced
Green pepper, diced
Cubed cooked ham, bacon or Spam
Grated cheddar cheese
Salt, pepper
- In a bowl, mix the eggs, peppers, ham or bacon, cheese, salt and pepper
- In a pan cook the egg mixture until you get your desired consistency (5-10 minutes)
- Slide breakfast frittata onto plate
Breakfast Frittata
Ingredients
1 (12 oz.) roll Jimmy Dean extra mild pork sausage
2 tbsp. butter
1 tbsp. oil
2 med. shallots, finely chopped
8 oz. fresh mushrooms, thinly sliced
2 sm. zucchini, thinly sliced
1 clove garlic, minced
1/2 tsp. salt
1/4 tsp. pepper
12 lg. eggs
1 1/2 c. shredded med. cheddar cheese
2 med. tomatoes, sliced
Sour cream
- In a pan, cook the sausage until browed. Drain fat
- In the same pan saute shallots, zucchini, mushrooms, and garlic
- Add the cooked sausage
- In a bowl, mix the eggs, salt, and pepper, and cheese (leave 1/4 cup of cheese)
- Pour egg mixture into skillet
-Top with tomato slices and add remaining cheese
- Add the skillet into oven for 15 minutes at 425 degrees
Sausage Breakfast Frittata
Ingredients:
1/2 lb. pork breakfast sausage, bulk
8 eggs
Black pepper to taste
1 tomato, chopped
3 green onions, sliced
1/4 c. water
1/4 c. butter
1 c. cheddar cheese, shredded
- In a pan, cook the sausage until browned. Drain fat
- In a bowl, mix together the eggs, water, and black pepper
- In a skillet, cook the eggs. When they start to set, top with sausage mixture, tomato, and cheese
- Place skillet into oven and bake for 15 minutes at 400 degrees
